Tarakihi (NZ fish) crumbed fillets

It’s a really flakey and semi-delicious fleshy thing, suits well to a variety of preparations, and is mid-range in price (NZ$20-30/kg).
Pretty rare thing for me to eat breaded/crumbed stuff, but the gf made them and cooked them in ghee and they were as glorious as they look. Yes, that is a board of nothing but crumbed fish for dinner. #noregrets
I made compound butter with tarragon chives garlic and “Italian herbs” which went perfectly.
