Chamois Steak
God made you to be somebody very… delicious!
Had heard of this so-called “Chamois” cut of steak from a friend who got it from Glenunga Gourmet Meats and said it’s the best steak he’s ever cooked, however no amount of searching could find a reference to this particular cut – his photos just looked like scotch fillet to me, but slightly different.
Went to this aforementioned butcher and sure enough there is a line-up of Chamois Steaks. I asked about them, saying they just looked like specifically cut really thick scotch fillets, and yep that’s what they are – I enquired as to the nomenclature, apparently they are named after a customer who requested this specific very round very thick 500g portion.
It’s kinda expensive – one steak will set you back about $22 bucks, but having sampled the goods I can attest it is certainly worth it.
Mmm fire.
Char-grilled – the smell is amazing, and it’s so soft and moist to the touch.

The girl made a mushroom garlic white wine sauce thing, very nice but overkill on a meat this damn good – all it really needed was some butter and garlic.
Definitely in my top ten of home-cooked steaks, maybe any steaks.
