Accordian Spud and Chimmichurri Prawns
Got the idea for this via Richard Nikoley on Free The Animal (includes video instructions).
Cut slices about 3/4 of the way through the spud, about 3-5mm apart. To let it stand, just cut a sliver off the bottom to make it flat. Cover the thing in garlic/herb butter, then chuck it in the oven at about 200 deg C.
After about half an hour pull it out of the oven for a while, the “leaves” should spread apart somewhat.
Then dump a crapload more garlic/herb butter on it, and stick it back in the oven.
Then serve it with even more butter.
